2 cups loosely packed greens, such as spinach or kale (with stems removed)
4 eggs
small bunch of fresh dill
sea salt and pepper to taste
butter or coconut oil for cooking
In a blender such as Vitamix, blend well the greens, eggs, dill, salt and pepper. Put a tablespoon of butter or coconut oil in a hot pan and add the egg mixture. Once it is settled on one side, flip it gently on the other side and let it cook for another couple of minute. Serves two lucky ones. :)
