- 1 cup rice
- 2 cups vegetable or bone broth (for a collagen boost)
- 1 pinch of saffron
- 1/4 tsp of turmeric (optional)
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 2 cups of chopped mixed vegetables (carrots, mushrooms, broccoli, onions, peas)
- small bunch of fresh parsley
- 2 cloves of garlic (optional)
Rinse the rice and put it in a pot with the broth, chopped veggies, and spices. Mix it well and when it comes to a boil, turn the heat down and leave it covered for 15 minutes. After it's done, turn the heat off and mix in chopped parsley and garlic for extra-flavor.
You can also add in cooked shrimp and a touch of Tamari. Serve with your favorite salad. Variations are endless, so have fun with it! :)
